I’m excited to find more recipes like this one—it’s so versatile and perfect for creating several dishes from just one chopping and cooking session. It’s basically meal prepping without having to eat the exact same thing every day. This dish can be turned into a simple, flavorful power bowl to keep you on track with your health goals or transformed into a family-friendly crowd-pleaser that adds some extra flavor to any meal of the day.

  6. Black beans 1 can rinse

  7. Black Eyed Peas 1 can rinse

  8. Mexican corn 1 can rinse

  9. Cherry tomatoes or Can or tomato’s diced

  10. Bell pepper one diced

  11. Red onion ¼ cup diced

  12. Cilantro Hand full chopped more if you want

  13. Lime Juice roll cut squeeze

  14. Apple Cyder Vinegar 1tbsp.

  15. Salt Peper Garlic powder

  16. Add Jalapeno if you want some more spice.

    I used pinto beans—use whatever you have; it will still turn out great. I’m trying to shop smarter and use pantry staples instead of buying extras. It saves money, and I’m enjoying the challenge. I hope you join me.
